Red Beans and Rice

Ingredients

  • 1 pound mild Italian sausage, chopped
  • 1 can kidney beans, drained and rinsed
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 5 cloves garlic, minced
  • 1 dry bay leaf
  • 1 can diced tomatoes, with juices
  • 3 cups chicken stock
  • 1 1/2 cups uncooked white rice
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1 dried chili pepper (chipotle was used here)
  • 1 teaspoon salt

Instructions

Place everything into a 6-quart slow cooker, place lid on, and set heat to high. Cook for 4 hours, or until sausage is completely cooked through and the rice has absorbed most of the liquid.
